I love making birthday cakes.
I warmly remember the crowning desserts we’ve made over the years to mark many-a-family milestone. There’s something about the precision of baking – slowing down to follow the recipe and measure, this step then the next – that adds to the ceremony of it all.
But sometimes, despite my best intentions I run out of time. And when I do, I have simple and fast way to keep the homemade (kind of) birthday cake tradition alive.
Here’s the step-by-step recipe to the Easiest Birthday Cake Ever.
- Run to the grocery store – buy some good quality cookies, ice cream, chocolate chips and tasty decorative bits of your liking (pecans, walnuts, malt balls, etc.)
- Assemble the cookie cakes – scoop a ball of softened ice cream and place in between two cookies, top with melted chocolate and while the chocolate is still warm, add the toppings
- Place the cookie cakes on a baking sheet lined with parchment and freeze until ready to serve
We’ll have to do the Easiest Birthday Cake Ever instead – and it will be delicious.
