Easy Birthday Cookies

A store-bought solution to keep the celebration bespoke and memorable.

I love making birthday cakes.

I warmly remember the crowning desserts we’ve made over the years to mark many-a-family milestone. There’s something about the precision of baking –  slowing down to follow the recipe and measure, this step then the next –  that adds to the ceremony of it all.

But sometimes, despite my best intentions I run out of time. And when I do, I have simple and fast way to keep the homemade (kind of) birthday cake tradition alive.

Here’s the step-by-step recipe to the Easiest Birthday Cake Ever.

  1. Run to the grocery store – buy some good quality cookies, ice cream, chocolate chips and tasty decorative bits of your liking (pecans, walnuts, malt balls, etc.)
  2. Assemble the cookie cakes – scoop a ball of softened ice cream and place in between two cookies, top with melted chocolate and while the chocolate is still warm, add the toppings
  3. Place the cookie cakes on a baking sheet lined with parchment and freeze until ready to serve

Today is Graham’s birthday and I’m so sorry the time has slipped away. This year I won’t be able to make his favourite One-Bowl Chocolate Cake by Martha Stewart with Mrs. Milman’s frosting.

We’ll  have to do the Easiest Birthday Cake Ever instead – and it will be delicious.
